Low Carb Whipped Cauliflower

Whipped Cauliflower Recipe (great low carb substitute for mashed potatoes.)

4 ounces heavy cream or Carb Countdown (2 percent if you want to cut some calories)
3 Tablespoons butter
Dash salt and pepper
2 or 3 strips bacon (nitrate free, if possible per Atkins, mine never are. I buy Hormel pre-cooked bacon at Costco.)
4 cups cooked cauliflower (I steam the largest head I can find in one inch of water for 20 minutes. I cut off the bottom leaves but use the rest of it. I steam it stem side down and score the bottom of the stem. Or, if you are using frozen cauliflower (nice to have some on hand for a quick sidedish when needed) just steam it the same way, but it takes less time because it isn't one whole head but lots of florets.
2 tablespoons sour cream
6 ounces gruyere or Monteray Jack cheese, shredded (I use whatever cheese I have on hand)

Mash the cauliflower. Then place it in a mixing bowl with the cream, butter, sour cream, salt and pepper to taste. With an electric hand mixer, puree all ingredients until there is a thick consistency or use the "pulse" option in a Cuisinart. Cook the bacon until crisp. Break the bacon into small pieces and mix through the pureed mixture. Spread into a casserole dish, and top with the cheese. Place in a 350 degree oven for 20 minutes or until the cheese has melted and browned slightly.

My mom is driving down tomorrow to spend Thanksgiving with me.(My dad is already here.) Anyway, I will be fixing the traditional turkey dinner for Thanksgiving this year, so I was looking for low carb options and ran across this. I actually had this awhile back at a Chamber function and it was a delicious so I'm going to give it a try. I'd love to know how you like it!

I'm back...

It's been a few days since my last low carb post, but I have been sick with a terrible cold and I just can't seem to get rid of it. Anyway, just to update everyone. My dad is in town helping to do some repairs on my house. He will be here until after Thanksgiving, and then my mom and brother will be driving down this Friday to spend next week with me. Thanksgiving is coming up quick, so Christmas is just flying up on us. When I was on Kimkins, I had a goal of losing 100 pounds by Christmas but that went out the window with all of the health concerns. My new goal is to lose 20 pounds by Christmas. I think that I can do this, if I dedicate at least 30 minutes a day to exercise. The weather in Florida is beautiful right now so I have no excuse to get out and walk. Til next time...
